As a savvy wine drinker, you probably already know that the wines produced in Europe typically have a lower amount of sulfites than American wines. In the European Union, the maximum allowable amount of total sulfites cannot exceed 150 mg/L for red wine and 200 mg/L for white wine. In contrast, all wines produced in the United States are allowed to have up to 350 mg/L of sulfites. You may have purchased European wines just for that reason – a purer wine is less likely to give you headaches and react with your body.

Given that detectable levels of pesticide, herbicide, and fungicide residue can be found in a lot of U.S. and European wines (doc), we take the extra precaution of having all of our wines tested to ensure that our sustainably and organically sourced grapes are free of any trace pesticides, fungicides, and herbicides.
Using old-world natural winemaking techniques, our wines slowly develop without any of the sixty allowable wine additives such as Mega Purple, Velcorin, or artificial enhancers. On the contrary, we strive for very low intervention in the winemaking process so the grapes can be expressed in their purest form.
Clean wine. Low histamines.
Like any food and food preparation, bacteria can be present and can be introduced into the process. This is also true for winemaking. If a wine isn’t carefully managed, bacteria can grow in high concentrations, leading to elevated histamine levels in the finished wine.
According to a National Library of Medicine article, most red wines have between 60-3800 mg/L of histamines and white wines have between 3-120 mg/L. This matters because high levels of histamines can cause adverse reactions in sensitive individuals, including headaches, skin flushing, and nasal congestion.
